This is one of my favorites. Cherry chews are actually a square and not a cookie but I think the maraschino cherries make it kind of festive. Use both red and green if you want. These are great all year round too!
The recipe comes from a 1950’s cookbook. I think only a few pages remain which include this recipe and the previously published shortbread.

I made two batches using:
For the base:
2 Cup of Flour
2 Cup of Large Flake Rolled Oats
2 Cup of Brown Sugar
2 teaspoon of Baking Soda
1 Cup of Butter
1/2 teaspoon of Salt
For the filling:
8 Eggs – Lightly Beaten
4 Cups of Light Brown Sugar
2 teaspoons of Almond Extract
8 Tablespoons of Flour
2 teaspoons of Salt
2 Cups of Shredded Sweetened Coconut
6 Cups of haled Maraschino Cherries
4 Cups of Pecan Halves

Base: Mix ingredients together |

Base: Press mixture into a 1/2 sheet pan and bake |

Those sound amazing!!! Did you use you the non-quick cooking oats? I gotta remember to pick up some maraschino cherries at the store. I'm totally out, and I'd really like to try these. I have to work on Valentine's Day, and a bunch of us girls are thinking about bringing in treats. I might make this. Since I have to work a double shift the night before, this would be something that I could make quickly and easily. And I know everyone would love it.

Sheila….I used regular slow cook oats this year but have used quick oats in the past. Never thought of these for valentines day but they are a perfect match,. Keep on baking!
