Maple Shortbread

Maple Shortbread Cookies
Ingredients
Cookie Dough
- 225 grams Butter - Unsalted - Room Temperature
- 85 grams Icing/Confectioners Sugar - Sifted
- 1/2 tsp Maple Extract
- 270 grams All Purpose Flour - Sifted
Maple Glaze
- 115 grams Icing/Confectioners Sugar - Sifted
- 70 ml Maple Syrup
- 1/2 tsp Maple Extract
- Water as required
Instructions
Cookies
- In a stand mixer with the paddle attachment, beat together the butter, icing sugar and maple extract. Stir in the flour until just combined.
- Divide the dough in half and shape into discs. Wrap inelastic wrap and refrigerate for 45 minutes.
- Working with 1 disc at a time, roll out dough between waxed paper or parchment to a 5 mm (1/4 inch) thickness. Using a 5 cm (2 inch) maple leaf cookie cutter, cut out shapes. Re roll scraps as necessary. Arrange cookies 1 cm apart in a parchment lined cookie sheet and refrigerate of 20 mintutes.
- Bake at 350° until edges are light golden , 15 - 18 minutes. Let cool on the pan for 1 minute and then transfer to a wire rack to cool completely.
Maple Glaze
- In a bowl, whisk together icing sugar, maple syrup and maple extract. Gradually add water to make a thin but spreadable glaze. Dip the cookie into the glaze and let stand until dry. 20 - 60 minutes. Store in a container with waxed paper between the layers so the cookies don't stick to each other.
Bakers Notes:
- a larger cutter will mean fewer cookies. The recipe as originally published used a cutter that was 5 cm in total length including the stem.
- with my cutter, the stem of the leaf was continually cracking off. To avoid the same problem during shipping, I used a paring knife to remove the sough stem from each cookie. This also avoided the dough stem falling off and saved on work and re-rolling.
- when making a few batched, dipping the cookies in the icing was the way to go
- when storing be sure to put waxed paper between the layers to avoid the cookies from sticking to each other
- these store and ship well
